Try to cook vegetable stew of zucchini and eggplant. It is a satisfying meal for people leading a healthy lifestyle.
Ingredients:
zucchini (medium-sized) - 2 pcs.
eggplant - 2 pcs.
carrots - 1 pc.
onions - 2 pcs.
bell pepper (red) - 2 pcs.
bell pepper (yellow) - 1 pc.
tomatoes (large) - 1 pc.
flour
Bay leaf
pepper
salt
greenery
sugar
Eggplant cleaned of skin (you can not clean - it is to taste as you like), cut into strips and lightly fry in oil.
Courgettes cleaned, cut into strips and fry in butter separately, adding to them a little flour.
Cut the onion into strips and fry in butter, add to it chopped carrots, 2 min. Add eggplant, zucchini, sliced julienne bell peppers, chopped tomatoes (without skin).
Stir, add the bay leaf, allspice and pepper pots of black and simmer it all over a low heat, covered. At the end add salt to taste, and add 1/4 teaspoon of sugar.
You can also add a little taste of herbs (dill, cilantro). Simmer until cooked peppers and eggplants.
