Popular dishes of Oriental cuisine.
Ingredients:
• lamb - 1-1.5kg
• cereal couscous - 500g
• olive oil - 100ml
• salt, white pepper, saffron - to taste
• ginger - 1 tsp
• cilantro - 1 bunch
• tomatoes - 3-4 pcs.
• carrots - 1-2 pieces.
• turnips - 2 pcs.
• Cabbage - 1/4 of head
• sweet pepper - 1-2 pod
• Zucchini - 2 pcs.
• Eggplant - 2 pcs.
Preparation:
Couscous sprinkle with water (do not fill), mixed with a third of olive oil and leave to swell.
Mutton wash, add water and cook, adding all the remaining spices and olive oil for 15-20 minutes. Then add peeled, coarsely chopped vegetables: carrots, turnips, cabbage, tomatoes, peppers and cook for about 10 minutes. Add the zucchini and eggplant and continue cooking over low heat for 30 minutes.
The swollen couscous shift colander with small holes, fix it on the pan in which the meat is cooked with vegetables.
Ready crumbly couscous out onto a large platter, pour sauce formed during cooking of meat, pieces of meat and vegetables lay around couscous.
